CONSERVATION
To always ensure the best possible performance from our products, storage methods are crucial. All our products are packaged in heat-sealed packs. The quantities inside the pack may vary depending on the product selected.
ATP (Protective Atmosphere)
Modified atmosphere packaging is the solution that allows us to best preserve the quality and freshness of our products.
By replacing the air inside the package with a controlled blend of natural gases (such as nitrogen and carbon dioxide), ATP slows oxidation processes and microbial proliferation, maintaining the organoleptic characteristics and food safety.
Our products are sealed while still hot in heat-sealed trays or bags, preserving all the flavor and fragrance of a freshly baked product. This method allows for up to 90 days of shelf life at room temperature, without the need for refrigeration or additional storage costs.
ATM (Modified Atmosphere)
This system alters the atmosphere surrounding the food within the packaging to suit its needs, slowing down the degradation process and the growth of microorganisms. The air inside the packaging is replaced with a pre-established optimal gas mixture (odorless and tasteless), approved by the European Union. The products should be stored at a controlled temperature of +4°C.
FROZEN
Once ready, our products are immediately shock-frozen to preserve their freshness and fragrance. The product, with a shelf life of 360 days, stored in an environment at a constant temperature of -18°C, allows the end consumer to enjoy the authentic flavors of Naples. By using our frozen products, we offer a service full of passion and tradition, without the need for specialized labor or advanced machinery!
