CONSERVATION

To ensure the highest performance of our products, conservation methods are a fundamental aspect: we have developed a technology that extends the shelf life up to 90 days without any quality degradation.

CONSERVATION

ATP (Protective Atmosphere)

Storage in a protective atmosphere is the most convenient and practical method for preserving our products: there’s no need for storage costs, as they are always ready for use with ambient temperature storage. All products are sealed while still hot in trays or heat-sealed bags. This guarantees the flavor of a product as if it were freshly baked, without the risk of contamination from external factors. This ensures perfect preservation of the product for up to 90 days at room temperature.

ATM (Modified Atmosphere)

This system alters the atmosphere surrounding the food within the packaging to suit its needs, slowing down the degradation process and the growth of microorganisms. The air inside the packaging is replaced with a pre-established optimal gas mixture (odorless and tasteless), approved by the European Union. The products should be stored at a controlled temperature of +4°C.

FROZEN

Once ready, our products are immediately shock-frozen to preserve their freshness and fragrance. The product, with a shelf life of 360 days, stored in an environment at a constant temperature of -18°C, allows the end consumer to enjoy the authentic flavors of Naples. By using our frozen products, we offer a service full of passion and tradition, without the need for specialized labor or advanced machinery!

REGENERATION

All of our products are very easy to regenerate: the pre-cooking process carried out before packaging allows the products to be completed in just a few minutes once opened.
